- Salt to taste

- Heat the oil in a pressure cooker; now add bay leaf, cumin seeds, clove, black pepper, green cardamom, black cardamom, cinnamon, and star anise. When it becomes light brown, add finely chopped onion and wait until it turns golden brown.
- Add tomato paste and ginger-garlic paste to it and mix them well. Now add salt, turmeric powder, red chili powder, coriander powder, and garam masala powder; mix well, and cook for 2 minutes. After this, add one spoon of mutton masala and let it cook for 5 minutes.
- When the masala is well roasted and the oil starts to leave, put the pieces of ojri in it and roast it well for 5-7 minutes.
