Heat the oil in a pressure cooker; now add bayleaf, cumin seeds, clove, black pepper, green cardamom, black cardamom,cinnamon, and star anise. When it becomes light brown, add finely chopped onionand wait until it turns golden brown.
Add tomato paste and ginger-garlic paste to itand mix them well. Now add salt, turmeric powder, red chili powder, corianderpowder, and garam masala powder; mix well, and cook for 2 minutes. After this,add one spoon of mutton masala and let it cook for 5 minutes.
When the masala is well roasted and the oil startsto leave, put the pieces of ojri in it and roast it well for 5-7 minutes.
When the Ojri is roasted well and its colorchanges, then put a small glass of water in it and close the lid of the cooker.
When there is one whistle in the pressurecooker, reduce the gas speed and let it cook on a low flame for 20 minutes.
Delicious ojri curry is ready. Garnish it with freshcoriander leaves. Serve it with naan or rice.
