  • 1 cup 226g, unsalted butter, softened
  • 1/2 cup 100g, granulated sugar
  • 3 cup 270g, Old-Fashioned Quaker oats
  • 1/2  teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 cup dark brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract, 5ml
  • 2 cup 11-ounce package Butterscotch Flavored Morsels

  • Begin by whisking together flour, baking soda, salt, and cinnamon in a bowl, then set aside.
  • Beat softened butter and both sugars until light and fluffy.
  • Add vanilla extract and eggs one at a time, beating them into the batter.
  • Incorporate the flour mixture until well combined.
  • Add old-fashioned oats and butterscotch chips, mixing until thoroughly combined.
  • Scoop out portions of cookie dough onto a parchment-lined baking sheet and proceed to bake.

  1. Freeze the prepared oatmeal scotchies for 10 minutes before baking to ensure they hold their shape and don't spread excessively.
  2. Use only old-fashioned oats for the best flavor and chewy texture.
  3. Despite the sweet nature of the cookie, salt is crucial for adding flavor, so don't skip it.
  4. Accurately measure your flour for precise results; fluff the flour and sprinkle it into your measuring cup before leveling if you don't have a kitchen scale.
  5. Refrigerate the cookie dough in a bowl for 2-3 days, but allow it to sit at room temperature for around 20 minutes before measuring it into cookies
  6. Opt for unsalted butter since salt is added to the recipe; if using salted butter, reduce the extra salt accordingly.
  7. If not a fan of butterscotch, swap them for chocolate chips.
