Ube Cheesecake

Ingredients
Crust:
- 1 tablespoon granulated sugar
- 1Â cup graham cracker crumbs
- â…› teaspoon kosher salt
- 3 tablespoons unsalted butter, melted
- cooking spray
Ube Ganache
- ¼ cup heavy whipping cream
- ¼ teaspoon ube extract
- ½  cup white chocolate chips
Filling:
- ½ teaspoon vanilla extract
- ¼ teaspoon  kosher salt
- 3 (8 ounce) packages cream cheese, softened
- ½ cup granulated sugar
- 1 ¼ cups ube jam (Ube Halaya)
- ½  cup heavy whipping cream
- 2 teaspoons ube extract
- 3 large eggs, at room temperature
Instructions
- Preheat oven to 325 degrees F. Lightly spray a 9-inch springform pan with cooking spray. Wrap outside of panin a double layer of heavy-duty aluminum foil.
- Prepare the Crust: In a bowl, whisk together the graham cracker crumbs, granulated sugar, melted butter, and salt. Now press this mixture on the bottom of the prepared springform pan.
- Now bake in the preheated ovenfor 15 minutes till set and light golden. Then transfer to a wire rack and letit cool for 20 minutes.
- Prepare the Filling: Use a stand mixer fitted with a paddle attachment and beat cream cheese with on medium speed untilcreamy and smooth, around 2 minutes. Add sugar and beat until combined, thenadd ube jam and cream, beating just until no streaks remain, stopping to scrapedown the sides and bottom of the bowl as needed. Add eggs, 1 at a time, beatingon low just until combined after each addition. Add ube extract, vanillaextract, and salt and beat on low until just combined. Pourthe filling into the cooled crust and smooth out the top with a spatula.
- Place springform pan in a large roasting pan.Add hot water to roasting pan to reach halfway up sides of springform pan.
- Return to the preheated oven and bake until thecenter is almost set but still slightly wobbly, 55 to 60 minutes. Turn offoven, and let cheesecake stand in oven, with door ajar (about 3 inches), for 1hour.
- Remove cheesecake from roasting pan, and placeon a wire rack. Remove foil from outside of the pan, and let it cool to roomtemperature about 1 hour. Cover with plastic wrap and transfer to therefrigerator to chill completely, at least 6hours or overnight.
- Prepare Ganache: Place chocolate chips in a medium heat-proof bowl. Heat cream in asmall saucepan over medium until steaming, Do not boil the cream. Then pour thehot cream over the chocolate chips. Let the mixture stand for 1 minute, thenwhisk the it until chocolate is melted and smooth. Add ube extract to thechocolate mixture and whisk to combine. Set aside to cool until thickened,about 15 minutes.
- Removethe cheesecake from the pan by running a knife along the edges of the pan toloosen it. Transfer cheesecake to a serving plate or platter. Pour ganache overthe top of the cheesecake, letting it drip off the sides. Transfer to therefrigerator and chill until set, about 20 minutes. Enjoy your delicious Ube Cheesecake!
