Ingredients

  • 1 pound dry navy beans
  • 1/2 cup brown sugar
  • 1/2 pound  bacon
  • 1 large onion, chopped
  • 1/2 cup molasses
  • 2 teaspoons dry mustard
  • 1/4 teaspoon black pepper
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 6 cups water

Instructions

  • Soaking the Beans: Start by rinsing the beans thoroughly in cold water. After that place them in a large bowl and cover them with enough water to cover the beans by a few inches. Cover the bowl and soak the beans overnight.
  • Cooking the Beans: Drain the beans and rinse them with fresh water next day. Transfer the beans toa large pot or dutch oven and add 6 cups of water to cover them. Boil thewater, then reduce the heat and let the beans simmer for approximately 1 to 1 ½ hours, until they are tender but still retain their shape.
  • Preparing the Bacon and Onion: Cook bacon in a large skillet until it becomes crispy, while the beans are cooking. Once done, remove the bacon from the skillet and let it cool on a plate lined with paper towels. In the same skillet, saute the chopped onion until it turns soft and translucent.
  • Prepare Flavourful Sauce: Combine molasses, ketchup, dry mustard, salt, Worcestershire sauce, brown sugar, and black pepper in a bowl. Mix all the ingredients well to create a flavourful sauce.
  • Combining the Ingredients: Once beans are soft, drain and transfer to a large baking dish or dutch oven. Add sauteed onions and crumbled bacon. Pour the sauce over the beans and mix everything together thoroughly.
  • Baking the Beans: Preheat oven to 325°F. Cover beans with a lid or aluminum foil and bake them approximately 2 to 2 ½ hours, until the beans are thick and the sauce has caramelized.
  • Serving: Remove the beans from the oven. Let them coolfor a few minutes before serving. Your dish is ready to serve. You can garnishit with additional bacon or chopped parsley.
